(NYTimes) - By 10 a.m., the temperature has climbed to 33 degrees Celsius. A limestone bluff shimmers in the heat. In the valley below, olive trees, lizards and vines are some of the only living things that have survived 10 weeks without rain. In Mediterranean landscapes like this, people slow down for the summer and time sometimes seems to stand still. Yet if there is wine-making region of France that has its sights fixed on the future, while keeping its links to the past, it is Roussillon.
