Due to the complexity of this phenomenon, one of the main challenges of the modern wine industry is to be able to deliver to consumers wines with consistent and enjoyable sensory characteristics. It is well recognised that oxygen plays an important role in wine bottle ageing.
Although it is generally accepted that wine ageing should take place without excessive exposure to oxygen, the risk exist for all wines to develop reduced off-odors if conditions become too reductive, as it is often observed with screw cap closures.
