At Concha y Toro, they definitely are not turning water into wine. In fact, this biggest wine producer in Latin America is using about 40 per cent less water than the global average in getting those grapes into your glass.Earlier this month, Concha y Toro became the first winery in the world to officially measure its “water footprint” on the environment in a joint project with the Fundacion Chile think tank and the international Water Footprint Network. They determined that some 92 per cent of the water used was in the vineyards and that was greatly reduced thanks to efficiently-controlled drip irrigation.
