Nova Scotia now has wine industry regulations and standards that pair well with the province’s unique terroir. "The most important thing . . . is that now the industry is being regulated, so that the process of making wine is outlined and more importantly, there are some provisions in there for enforcement, such as auditing of cellars," Gerry McConnell, vice-chairman of the Winery Association of Nova Scotia, said in an interview Wednesday at the association’s Bedford office.
