Wine allergies a thing of the past?

Some people are affected by headaches, rashes, sinus problems and even nausea as a result of drinking wine – and we're not talking about over-consumption. A small serving can be all it takes to trigger an allergic reaction, because of the free sulphur component wine contains. Until now, the only way around this has been to either avoid wine altogether or drink wine that has been cellared for several years. Ian Isaacs, one of the directors of Scenic Cellars, Taupo, recently sent us a sample of a new product he is importing from Australia that significantly reduces the main preservative, sulphur dioxide (SO2), in wine.
