Description

Two terraced vineyards, planted in 1997 have created our Bevilo wine, composed of 90% San Giovese Grosso, 10% Cabernet Sauvignon and Merlot. Early summer, the careful removal of bunches of grapes reduces the yield per plant and increases the quality of the wine.The spontaneous fermentation with natural yeast, present in the vineyards, and an approximate two week maceration of the must contributes to the fruity character of the wine. During fermentation the temperature is limited to 27-28°C. After fermentation the wine is transferred to 400 litre aged french oak barrels where the malolactic fermentation takes place. Careful evaluation of the intrinsic character of the young wine will decide how long the three varieties will stay in the barrels. After 2 years the wine is blended and bottled. The wine is allowed to mature another four months in the bottle before it is ready to be enjoyed. Though it is ready to be drunk in 2011 it will reward up to eight years in the cellar.

Rating a wine is not for experts alone. This skill can be developed by anyone with enough practice and exposure and it starts with understanding the elements in winemaking, tasting and rating. There are basically 4 areas where wines are rated. These are appearance, aroma, taste and after taste.
